Vinified in Burgundy barrels. A barrel of Pinot Noir and Pinot Meunier is blended in. Disgorged in January 2025 with no dosage after 18 months on lees.

A chance encounter between Hugo Stewart & Daniel Ham in 2018 was the spark for Domaine Hugo, the second collaboration of Hugo’s twenty year journey into wine. Dan heads up the winemaking, with Hugo concentrating on the biodynamic viticulture. A shining example of how the future of wine should look in the UK: Hugo's attention to detail in the vineyards and Daniel's commitment to terroir driven wines are a powerful combination.
